They run the cookout - Black BBQ Pitmasters - Texas Legends

Shows like High on The Hog on Netflix intrigued me and thought me things about our foot histories that I didn't know. It also introduced me to the concept of pitmasters. A pitmaster is someone who specializes in the art of barbecuing, particularly in the use of a barbecue pit or smoker to prepare meat. Who is the best bbqer in your family? For me, it was my grandmother, but after that my aunt and uncle picked up where she left off.

Today, many modern pitmasters are working to honor the legacy of Black pitmasters by paying homage to their techniques and flavors. Some barbecue joints even host events dedicated to celebrating the contributions of Black pitmasters throughout history.

The history of Texas barbecue is deeply intertwined with the stories of these Black pitmasters. Their dedication to the craft, often under challenging circumstances, is what built the foundation for Texas's global reputation as a barbecue mecca. Their legacy continues to burn bright in pits and kitchens across the state, inspiring new generations.

  • Greg Gatlin (Gatlin's BBQ, Houston, TX): A highly respected pitmaster and owner of Gatlin's BBQ in Houston.2 Greg, with his mother Mary as a central figure, has built a reputation for excellent barbecue and warm Southern hospitality, making Gatlin's a must-visit spot in Houston's vibrant BBQ scene.   • Michelle Wallace (formerly Executive Chef at Gatlin's BBQ, Houston, TX; now Jūn in Houston): While perhaps more known recently for her fine dining work, Michelle is an incredibly talented chef and pitmaster with a strong background in barbecue, including her time at Gatlin's. She's a fantastic example of a Black woman excelling in the BBQ and culinary world.

  • Chuck Charnichart (Barbs-B-Q, Lockhart, TX): A rising star and one of the most exciting new voices in Texas barbecue. While not exclusively a Black pitmaster, Chuck identifies as a woman of color and is part of the new generation pushing boundaries and receiving well-deserved recognition for her exceptional brisket and unique South Texas-inspired approach. She previously cooked at Goldee's (a Texas Monthly #1 BBQ joint) and is now making waves with her own venture, Barbs-B-Q.
